Setting
You pull the crown out and turn it to set the hands, the same way you set most wristwatches. It was common on railroad watches until about 1906 to 1908, when lever setting took over for new watches, though older pendant-set watches were often allowed to stay in service. On dress watches and everyday grades it stayed the norm.
